How to preserve oysters?

If you want to taste your oysters the same day, open them at the last moment. Place them on a bed of seaweed or crushed ice. If you prefer to consume them later, leave them closed in order to retain all their water and freshness. Store oysters in their wooden box, the hollowed side of the shell downward, in a cool ventilated place between 5 and 15°C. This way you can keep your oysters for up to 10 days.

How to cook oysters?

Servings 4 pers. :  24 or 32 Normandy oysters, salt, black pepper, parsley, shallot,
Normandy butter

Instructions:

Preheat oven to th. 4
Open oysters and place them in gratin dish. Chop finely parsley and shallot then add a knob of butter and mix it up. Salt and pepper oysters. Place a small knob of that preparation on each oyster. Bake in the oven until topping is browned. Remove from the oven and serve immediately.
